1 ½ ounces Campari
4 ounces (½ cup) white or rosé pétillant naturel
In a wine glass filled with ice, combine the Campari and pétillant naturel. Finish with the lemon slice.
1 ounce pastis
¼ ounce crème de menthe
4 ounces (½ cup) cold filtered water (more or less to taste)
Lime round (optional)
Into a Collins glass, pour the pastis and crème de menthe. Add a few ice cubes and top with the water. Finish with the lime round, if using.
Serves 8 (for a crowd)
1 large yellow grapefruit
1 large lemon
16 ounces (2 cups) dry white wine, chilled
2 ounces Suze
Sparkling wine, chilled
Lemon rounds for garnish
Slice a quarter of the grapefruit into thin rounds and juice the remaining fruit. Slice half of the lemon into thin rounds and juice the other half. In a pitcher, combine the white wine, Suze, grapefruit juice and slices, and lemon juice and slices. Chill for at least 30 minutes, or up to 2 hours. To serve, strain and divide equally among coupe glasses. Top each with sparkling wine and a lemon round.
3 ounces Lillet Rouge
¼ ounce crème de cassis
½ ounce fresh lemon juice
Red currants and/or berries, for garnish
In an ice-filled lowball, combine the Lillet, crème de cassis, and lemon juice. Top with soda water and garnish with currants and/or berries.
SHOT DE ORANGE
Makes eight 1½-ounce shots
11 ounces (1 1/3 cups) dry orange wine
1 ounce blanc vermouth
3 dashes orange bitters
6 orange peels, divided
In a shaker filled with ice, combine the orange wine, vermouth, and bitters. Pinch two of the orange peels over the shaker to express the citrus oils and discard the peels. Cover and shake vigorously. Strain into shot glasses, express the remaining peels over the shots just before serving.
